Description
A pesto class in Genoa with a world champion takes place in a garden in summer, and in a covered, heated outdoor area in the winter months. Camilla Pizzorno, who won the World Pesto al Mortaio Championship in 2022 as its youngest winner, walks you through the craft step by step.
First come the ingredients: Genovese DOP basil, Vessalico garlic, pine nuts, 24-month Parmigiano Reggiano, Fiore Sardo pecorino, Riviera olive oil and coarse salt. You learn what each one brings to the sauce. Then comes the pounding itself, in a Carrara marble mortar more than 150 years old with an olive wood pestle, following the gestures handed down through generations.
- Pesto tasted first as a starter with Genoese focaccia
- Trofie or croxetti with the pesto you made
- Tiramisu to finish
- A Riviera wine and Italian liqueurs such as limoncello, mirto and grappa
You leave with the champion's recipe as a PDF, plus photos and videos of the session and a small gift. The experience runs about ninety minutes. Tell the hosts about allergies when you book; a waiver is signed before the workshop begins.
