Description
The pesto al mortaio masterclass in Genoa takes place in the BioTigullio5Terre shop, in the historic old town a stone's throw from Columbus' house. A Ligurian family runs it, and the lesson is hands-on: each guest gets a Carrara marble mortar and a wooden pestle.
You build the sauce yourself from PDO basil, Parmesan, pecorino, pine nuts, garlic, plus extra-virgin olive oil, learning the traditional gestures as you go. No cooking skills are needed. One of the instructors, Gaia, reached the final of the world pesto championship held in Genoa, and the family shares stories of the territory alongside the recipe.
- A plate of trofie with the pesto you made
- A glass of Ciliegiolo del Tigullio, or another local wine such as Vermentino or Pigato
- Aprons and equipment for the class
- A 90-gram jar of pesto to take home
The session lasts two and a half hours. Mention food allergies when you book. Extra drinks and any purchases in the shop are on top.
